  • 1 can corn, drained and rinsed
  • 1 cup quinoa, rinsed and drained
  • 3 cups vegetable broth
  • 1/2 cup nutritional yeast flakes


Heat the oil in a large pot over medium heat. Add the onion, bell pepper, and garlic; sauté until the vegetables are soft, about 5-7 minutes.

  • 1 carrot, grated
  • 1/2 small red onion, finely diced
  • For the dressing:
  • 2 tablespoons vegan mayonnaise or Miracle Whip
  • 1 tablespoon red wine vinegar
  • 1 teaspoon yellow mustard
  • 3/4 teaspoon celery seed
  • 1/2 teaspoon onion powder

Salt and pepper, to taste Instructions: In a large mixing bowl add all salad ingredients. In a smaller bowl whisk together the dressing ingredients. Pour dressing over salad and mix well to combine. Serve on a sandwich or as a side dish.

Lemon Tarragon Roasted Chickpeas


  • 1 – 15 oz can chickpeas, drained and rinsed
  • Oil of choice for roasting (I used avocado oil)
  • 1/2 teaspoon salt
  • Lemon zest from 1 lemon
  • 1 teaspoon dried tarragon


  • Juice of 1/2 a lemon
  • 2 teaspoons olive oil

Salt and pepper, to taste Instructions: Preheat oven to 400°F. Line a baking sheet with parchment paper and set it aside. In a large bowl add the chickpeas and a few tablespoons of oil. Use your hand or a spoon to toss the chickpeas around to coat them in oil.

Spread the chickpeas out onto the baking sheet and bake for 30-35 minutes, stirring once about halfway through cooking time. In a small bowl whisk together all dressing ingredients until emulsified. Once the chickpeas are done cooking remove them from the oven and allow them to cool for a few minutes. Pour into a medium-sized bowl along with all of the dressing ingredients and toss until well coated. Add the lemon zest, tarragon salt & pepper, to taste. Serve warm or cold as a side dish or snack.
